I absolutely love nut butters so, so much. They are creamy yet crunchy, sweet yet salty. They are indulgent on their own, yet versatile enough to be eaten with whatever you fancy. Plus, natural nut butters are full of healthy fats, protein, vitamins and minerals to keep you feeling good and satisfied!
I must admit, my favourite way to eat our nut butters (link) is scooping it straight out of the jar. However, there are certainly many ways to make your nut-butter indulgence an extra bit special! Here are 4 of our favourite nut butter recipes/snack ideas:
1. Nut Butter Triple Chocolate Brownies
My current favourite brownie recipe! They are truly the perfect feel-good brownie, made with great natural ingredients. The base recipe was found off the internet. I added our Triple Nut Butter as a replacement for traditional butter / eggs. I also added chopped up nut butter cups (let me know if you are interested in the recipe) – optional yet I want to say necessary.
I topped it with more Triple Nut Butter, and added some fresh strawberries for a nice zingy touch. Thomas and I had this recently as we watched Guardians of the Galaxy (Vol. 2) for the tenth time.
2. Nuts and Chocolate
Simple mix of nuts topped off with our Triple Nut Butter and melted dark chocolate.
This little creation is like eating straight from the jar, but fancy! Perhaps not fancy, but it does make a lovely fuss-free dessert pot. I like to use Montezuma’s dark chocolate buttons (link) – they melt so well. I would however, recommend blitzing up the whole nuts into smaller pieces.
3. Crispy Coconut Almond Butter Muffins
You can use nut butters to make great breakfast muffins! The muffins we made had two main layers – the cakey portion below and the nut butter portion on top.
The cakey portion can be done in the same way as the brownies above – minus the nut butter cups, regrettably. For the nut butter portion, I mixed our Coconut Almond Butter with some peanut butter, then added some coconut oil and oat flour, so it’ll get a touch crispy like Bolo Baos!
4. Soft White Bread w Milk
This just makes me smile. I asked Thomas what his favourite way of eating nut butter was, and this was it. He emphasized the “milk” part. Unfettered by the increasingly popular non-dairy movement, Thomas still stands by milk 100%. I’m not a big fan though so this is actually a cup of almond milk. Sneaky.
Anyway, bread with nut butter was the epitome of my childhood (together with Arnott’s teddies). It was simple and comforting – I find myself smiling as I am typing this out. Childhood snacks are the best snacks.
